PUTZ'S Pickle Pitta Pizza

We heard PUTZ'S PICKLES are essential on pizza. So to celebrate pizza day we did it PITTA style and created the 'PUTZ'S PICKLE PITTA PIZZA'.

Ingredients:

500g Bread flour

1 Sachet of fast action dried yeast

1 Tbsp Olive oil

500g Passata

125g Mozzarella

Rosemary & Bay leaf

Salt & Pepper


Method (Pitta Pizza Base):

Mix yeast with 300ml of warm water. Leave to sit for approx 5 mins. Then combine with your flour, salt (2tbsp) and olive oil and mix until a dough forms.

Sprinkle a little flour on a work surface where you will knead the dough for about 5/10 mins until its smooth and elasticated.

Then add your dough into a lightly oiled bowl and cover with a tea towel for one hour, your dough should roughly double in size.

Heat your oven as high as it will go leaving your baking tray inside to get nice and hot

Divide your dough into about 8 balls (depending on how big you want your pitta pizza). Flatten thees out with the palm of your hand, then using a rolling pin shape dough into an oval shape. They should be 3-5mm thick.

Take your tray out of the oven and place your pitta dough onto it. Cook your dough for no more than 5 mins. You should see it rise very quickly. Once cooked, remove from the oven and keep warm on a tea towel.


Method (Pitta Pizza Topping):

On a medium heat add your passata, rosemary, bay leaf and a pinch of salt & pepper. Let this cook down for a minimum of 15mins to form a nice rich tomatoey base.

Once the tomato sauce has cooked down its time to create your pitta pizza. Spread a layer of the tomato sauce on your pitta, then add your mozzarella slices, finally add your toppings of choice.

Stick this into the oven on a very high heat (approx 5/10 mins) or until the cheese has melted.
