Mixing it up with some Mediterranean style pitta nachos. Why not grab a bag and give 'em a go yourself?
Ingredients:
Soffle's Pitta Chips (165g)
Mozzarella
Courgettes
Tomatoes
Red Onion
Black Olives
Chilli Pepper
Bell Pepper
Sundried Tomatoes
Avocado
Lime
Parsley
Method:
Dice all of your veggies into small chunks.
Line a baking tray with your pitta chips.
Load your chips with mozzarella, courgettes, tomatoes, red onion, black olives, chilli's, bell pepper, sundried tomatoes, and top with more mozzarella.
Pop into the oven on a medium heat for 12 mins or until mozzarella has melted.
Whilst waiting for your cheese to melt, make a quick guac by forking into a chucky mush with lime juice, salt & pepper.
Remove your tray from the oven and top it with your guac & fresh parsley.
