French Onion Soup š with crunchy Rosemary š± & Thyme šæ PITTA CHIPS to replace the bread. Finished off with a blow torch for lots of office fun š„š„š„
Ingredients:
1 x 60g Soffle's Rosemary & Thyme Pitta Chips
5 x Large Brown Onions
3 x Garlic Clove
3 x Tbsp of Butter
100g Gruyere Cheese
1 x Tbsp of Marmite
1 x Vegetable Stock Cube
150ml White Wine or IPA
1 x Large Bay Leaf
Fresh Thyme
Salt & Pepper
Method:
Start by cutting your onion into long slices. On a low-medium heat and some butter into a pan, once melted and your sliced onions along fresh thyme &. bay leaf. Once the pan starts to dry out start adding your alcohol bit by bit to keep the onions moist and softening.
Cook these down for approx 25 mins, being sure not to let the onions burn, as the bottom of the pan drys out you can top up with your alcohol or a splash of water.
Time to add your finely chopped garlic & cook down for a few mins.
Now add roughly 900ml of stock water and keep the soup simmering. Also add your marmite for a nice rich flavour then add salt and pepper to taste.
Leave this simmering for around 15 more mins. Once done ladle into a bowl, and a handful of pitta chips into the bowl, grate your Gruyere onto the chips then place them underneath a grill until the cheese starts to bubble and brown.
Allow to cool and enjoy this rich & satisfying soup! x
